M&M's Cookies Recipe

As always, I was in the mood to bake something sweet today. I looked around my pantry and found I had all the ingredients to make either chocolate chip or M&M cookies. I opted for M&M's this time because I just love the bright colors of the M&M's. So here is the recipe for chewy cookies with slightly crisp edges...I've made it time and time again, it's always soooo good! I just caution you before making this, you will become addicted to them. Give them to your friends and neighbors so that you don't eat the whole batch yourself! :)


Yields 2 Dozen Cookies

1 cup plus 2 tablespoons All Purpose Flour
1/2 tsp baking soda
1/2 tsp salt
1 egg, at room temperature
1 tsp vanilla extract
1 stick unsalted butter, at room temperature
1/3 cup sugar
1/3 cup plus 1 tablespoon light brown sugar
1 cup of M&M's


1. Preheat your oven to 375 degrees.

2. Cream the butter and both sugars together. Make sure to scrape the sides with a spatula!



3. Add the egg and vanilla and beat until smooth and combined.



4. Mix the flour, baking soda and salt together and then dump it all to the butter mixture. Beat until combined.



5. Add all the M&M's and fold them in with a spatula.



6. Drop rounded tablespoons onto a parchment lined baking sheet. Keep about 1.5-2 inches apart, these will spread out while baking. (I slightly flatten them out with my fingers also, you can see the difference in the picture where the cookies are in the oven.)




7. Place baking sheet in the middle rack and bake for 8-10 minutes. Just until the edges are nice and golden brown. Remove from the oven and let it cool.



8. Once cooled, enjoy! Of course, I couldn't wait until they were cooled all the way. :)


I was able to make 25 cookies in this batch, but it all depends on how big you make your cookies. I usually am able to get a little over 2 dozen when I use this recipe. You can also substitute with seasonal M&M's. Use pastel colored M&M's to make these cookies for Mother's Day!

Mom's Birthday Cake + Sushi

It was my mom's birthday yesterday and so I decided to make her a cake and make sushi, instead of going out to eat.

The cake I made was a Korean sponge cake with a stabilized whipped cream frosting. I topped it with a variety of fruits. My mom said she didn't want me to put fruit inside the cake but after eating it I think it would have been better if I added fruit in the middle. I'm pretty impressed with the results. It looks and tastes like a cake you can buy from a Korean bakery!




Now for the sushi...
I made California rolls, shrimp tempura rolls, eel rolls, spicy california rolls, spicy shrimp tempura rolls, and crab crunch rolls. I wish I had a rewind button so I can go back to yesterday and eat all this again. :)


It was a lot of hard work making all this but in the end it was worth it. It was all for the best mom in the world!

Chocolate Craving - Molten Lava Cake

Don't you ever have those severe chocolate cravings? Well, tonight I had one. I didn't have any chocolate bars or anything that was prepared to eat so I decided to open my pantry and make these Chocolate Molten Lava Cakes.

Went over to Mitsuwa last night and got my Japanese fixin. I didn't go too crazy because I have to keep in mind my luggage weight. It was 44 pounds on the way to NY/NJ...only 6 pounds away from more fees! Lawd help me. ;)
